TASTING NOTES
Crafted in a lighter style than your typical Shiraz, this fresh, fruity, semi-sweet wine displays aromas and flavors of ripe blueberries, blackberries and raspberries with dark chocolate undertones. Refreshing and approachable with a perfect balance between sweetness and acidity, it makes a great aperitif and pairs equally well with meat dishes, cheeses, and desserts. Best served slightly chilled.
WINEMAKING PRACTICES
FERMENTATION TEMPERATURE: 22°C to 26°C
METHOD: The grapes were handpicked from vineyards located mostly in Paarl, a region with a Rhône-like climate that is perfectly suited for Shiraz cultivation. They were cold macerated for 2 days before undergoing natural fermentation (induced through temperature increases) in stainless steel tanks, using only naturally occurring yeasts. Continuous pump-overs were performed during fermentation. When the sugar level reached 5ºB, the wine was pressed and returned to tank for malolactic fermentation. It was then aged on on its fine lees. A portion of the wine has aged on American oak.
WOOD AGING: 30% of wine was aged on American oak staves for 5 months.
