Wow Excelsior Shiraz is drinking great now. I tried this wine with spicy Indian cooking and it made the food taste excellent. I am used to spicy foods so it was an experiment for me to see weather this red wine will suit the food. The experiment was successful. I would recommend Excelsior Shiraz to my fellow Indian Community if you want to have a red wine that pairs well with traditional Indian Style of cooking… here it is… The Excelsior Shiraz, you won’t be disappointed.

WINEMAKING PRACTICES

Method:
The wine was fermented in stainless steel tanks for 7 days, with pumpovers of 1 hour performed twice daily. The wine was pressed after 5 days and was aged in a combination of French and American oak for 8 months.
Wood aging:
8 months in 80% French oak and 20% American oak.
