 90% Cabernet Sauvignon, 8% Shiraz. 2% Petit Verdot

 VITICULTURAL PRACTICES

Varietal: 90% Cabernet Sauvignon, 8% Shiraz, 2% Petit Verdot

Appellation: Robertson

Soil Type: Calcareous clay

Age of Vines: 5-20 years

Trellising: 5 wire Perold

Yield: 7-12 tons/ha

Irrigation: Drip, with regulated deficit irrigation practiced

to ensure small berries.

Picking Date: March 15 – April 5, 2007

Grape Sugar: 24.5-26º B

Acidity: 4.5 g/l

pH at Harvest: 3.8

WINEMAKING PRACTICES

Fermentation Temperature: 28 – 32º C

Method:

Fermented for 7 days in stainless steel tanks with pumpovers twice daily. Once dry (after 7 days on the skins) the wine was pressed. It was then aged for 18 months before bottling.

Wood aging:

35% of the wine was aged for 18 months in a combination of French and American oak.
